Will – Managing Director
Will is the Managing Director of Water’s Edge Canberra and Water’s Edge Restaurant Batemans Bay, bringing over 12 years of experience in the hospitality industry. With a strong background in restaurant management and operations, Will has played a key role in establishing Water’s Edge as one of Canberra’s most respected dining destinations.
Before founding Water’s Edge, Will gained extensive experience working with several well-known hospitality organisations and clubs, including Eastlake Group Canberra, Temora RSL, Condobolin RSL, Narromine RSL Club, Belconnen Soccer Club, and Parkes Leagues Club. These experiences helped shape his deep understanding of the Modern Australian dining industry and guest hospitality.
From a young age, Will was inspired to build a successful career in hospitality. After thorough research and planning, he chose to pursue professional training in Australia and relocated to develop his expertise within the country’s dynamic hospitality sector.
Will believes the key to success in the restaurant industry lies in understanding guest expectations, delivering consistently high-quality food, providing exceptional service, and continuously adapting to evolving industry trends.
Under Will’s leadership, Water’s Edge Canberra has been recognised among the top 10% of restaurants worldwide on TripAdvisor in 2020, 2021, and 2022, earning the Travellers’ Choice Award and receiving a Chef Hat from the Sydney Morning Herald Good Food Guide in 2022, 2023, 2024, 2025 and 2026.
Executive Chef Avtar Singh (Av)
Avtar (Avi) was born in India and began his culinary career as a chef in Sydney in 2009. After several years of travelling and gaining experience across Australia, he chose to settle in Canberra and continue developing his passion for innovative cuisine.
Avi is dedicated to keeping the restaurant’s menu fresh and creative by regularly connecting with local farmers, producers, and artisans. These relationships allow him to stay inspired by seasonal ingredients and bring new ideas to the dining experience.
Growing up as a farmer in India, Avi developed a lifelong passion for farming and gardening. Today, he continues that passion by growing organic herbs and garnishes in his own garden, which he incorporates into many of his dishes.
Avi’s cooking style reflects his authentic culinary vision – unique fusion of Indian spices and Australian produce, creating flavours that are both vibrant and refined.
His long-term dream is to one day open a restaurant that uses only organic ingredients grown directly from his own garden, bringing a true farm-to-table philosophy to life.
